We hope you enjoy today's video, it something we have wanted to do for a while with my mother in law, however we just knew we had to think of the perfect dish, and what better than Money's absolute favourite: SHAHI PANEER! The recipe is listed below:
RECIPE
INGREDIENTS
2x red onion
Half clove of garlic
Just over thumb size of ginger
2x tomatoes
1x green chilli
3x cardamom seeds
Crushed cinnamon sticks
3 cloves
Half of a small bowl of cashews and almonds
Cream
Yoghurt
1x block of paneer
Milk (optional to add in at the end to make runnier)
Saffron strands
Firstly, cut up the ginger, garlic, tomatoes, chilli and onion. Then into a hot pan add in the cashews and almonds for a few minutes without any oil to roast them, and add in vegetables already cut up. Once these have softened together, add about half a cup of water to these, and put in the pressure cooker for 2 whistles. Leave this to cool for a moment, and get out another pan and add oil into this, in this add the cinnamon sticks, cloves, and cardamom seeds to simmer. While these simmer, if the pressure cooker has not cooled down you can run it under cold water to cool. From this, add in the ingredients of pressure cooker to a grinder, and grind all together. One this has been grinded, drain away the excess water but keep this to the side for later, and add into pan that has been simmering. Into this add 1 teaspoon of turmeric, 2 teaspoons of red chilli powder, half a teaspoon of cumin powder and coriander powder, and one and a half teaspoon of salt. Add in the glass of water from earlier that was drained from vegetables, and cover with lid to let rest for a few minutes. While this is simmering, chop up all the paneer from the block to get ready to add to curry. Once you have done this, turn down the heat on the tarka to ensure when you add yoghurt it is not too hot, and once this has cooled add in either 2 or 3 teaspoons of yoghurt (to your own taste), and stir well. Put the heat to medium to ensure the yoghurt doesn't pop. Next, add in half a small bowl of cream, and stir well. Next, add in paneer, and let simmer with lid on for 5 minutes to ensure it soaks up spices. Then, add a pinch of saffron for flavour at the end. Optionally, you can also add in a teaspoon of sugar at the end to make sweet, or add some milk into tarka to make the mixture runnier.
