In this video, I head off to the woods with Maggie, my trusty Newfoundland to cook up a Christmas feast on the campfire. After collecting firewood and lighting the fire, I set about preparing the vegetables and ingredients to cook a full Christmas roast with all the trimmings cooked in my Dutch oven and a couple of Zebra billy pots. Even Maggie enjoyed it (and she’s really fussy), dinner over, its time for a festive, boozy hot chocolate before getting everything cleared up and Cleared away.
I’d just like to take this opportunity to thank you all for your continued support over the past year. Braised Red Cabbage Recipe
1/2 red cabbage (thinly sliced)
1 onion (finely chopped)
1 large apple (cut into chunks)
1 tbsp cider vinegar
1 tbsp oil
Salt and Pepper
Any festive spices (star anise, nutmeg, cloves etc)
Knob of butter.
1. Cook the onion slowly in the oil until softened.
2. Add the apple and apple cider vinegar and cook for a further 5 minutes until the apple has softened.
3. Add the cabbage and any seasoning you wish, cover and cook on a lowish heat for about 20 minutes.
4. Stir in a knob of butter and serve with whatever you like (the big black shaggy dog is optional, just don’t let him/her have any coz of the onions!)
