So you finally harvested an animal, now what do you do to properly care for your harvest? In this video, Marcus Hockett explains how to properly do the gutless method, using an elk for an example. The gutless method is a technique to properly get all of the meat without having to deal with the mess of actually gutting an animal. You start by skinning the animal enough to be able to take off the front and hind quarter on each side. Then you can carve out the backstraps, retrieve the tenderloins, and finish by taking as much scrap meat as possible.
